Family Pizza Night

*Chicken-Artichoke Pizza with Rosemary
Chicken thighs, diced artichoke hearts, fresh rosemary, fresh garlic, Mozzarella cheese, Asiago cheese, and Laughing Cow Creamy Swiss. (Honestly, the Laughing Cow made it awesome.) This was such a great pizza..the rosemary added a great warmth to the chicken and artichokes. It was like tasting Home on a pizza.

*Pepperoni and Mushroom Pizza
I think the ingredients are fairly self-explanatory here…
Our son helped me make this one. Well, when I say help, what I really mean is that he stood on his stool and directed me as he ate all the mushrooms and turkey pepperoni. It was delicious, he ate a whole lot of it.

*Caramelized Onion and Brie Pizza with Balsamic-Peach Jam
Roasted chicken thighs, caramelized onions, a ‘jam’ made out of reduced balsamic vinegar, peach preserves, salt, onion powder and brown sugar, and brie and asiago cheeses. This was a great showcase of some my all time favorite flavors-a perfect balance of sweet and savory. And cheesy. Yum.
